Its hot, its been a hard week – I don’t know about you but I need a drink. OK more than one – a lot more! lol

Plant Specialists Bubbly Mojito Madness

OK here is what you are going to need – personally I multiply by 4 if i’m on my own ( don’t judge ) or 8 if I have a friend or two join. ( even imaginary )

1 oz white rum

.5 oz simple syrup  (see note)

.5 oz fresh-squeezed lime juice

2-3 sprigs fresh spearmint ( from your Cocktail ingredient garden – more on this next week )

3-4 oz sparkling wine – Use a good one but don’t go crazy – I like a little sweeter

Fresh berries – its summer use fresh you can crush them a little but don’t go all crazy on them ! I mean its not their fault the week was so bad !

Farmers markets are full of lovely fresh sun ripened berries right now – or if you planned correctly – Plant Specialists has planted Strawberries or blueberries on your rooftop !

Note:  To make simple syrup, heat equal parts sugar and water until the sugar melts.  Allow to cool.  Keep refrigerated and use within 1-2 weeks.  Don’t buy bottled simple syrup—make it yourself. _ I always have a bottle in the fridge.

Its really really simple to make this Syrup – hey let’s just call it Simple Syrup! lol – its like we are people who specialize in Plants – lets call us Plant Specialists ! you can add to this base as well if you want to have a more complex syrup – orange peel. rosemary, oregano, Thyme etc. I always add while boiling then remove herbs but keep citrus peels in the Syrup in the fridge.

Reserve one mint sprig for garnish. In a cocktail shaker, muddle the first four ingredients.  Shake with ice and strain into a champagne flute or highball glass filled with a mixture of crushed ice and whole berries.  Top with 3-4 oz sparkling wine and garnish with mint.

Bottoms up ! Try stopping at one ! ( do those people really exist ?)
